Make the Chicken
Pat the chicken cutlets dry with paper towels. This little step matters—it helps the flour coating adhere and gives you a better golden crust.
Season the gluten-free flour with salt and, if you like, a little black pepper. Lightly dredge each chicken cutlet in the flour, shaking off any excess.
